Italian Crusted Cod
INGREDIENTS
1/4 cup fine dry bread crumbs
2 tablespoons grated Parmesan cheese
1 tablespoon cornmeal
1 teaspoon olive oil
1/2 teaspoon Italian seasoning
1/8 teaspoon garlic powder
1/8 teaspoon ground black pepper
4 (3 ounce) fillets cod fillets
1 egg white, lightly beaten
DIRECTIONS
Preheat oven to 450 degrees F (230 degrees C).
In a small shallow bowl, stir together the bread crumbs, cheese, cornmeal, oil, italian seasoning, garlic powder and pepper; set aside.
Coat the rack of a broiling pan with cooking spray. Place the cod on the rack, folding under any thin edges of the filets. Brush with the egg white, then spoon the crumb mixture evenly on top.
Bake in a preheated oven for 10 to 12 minutes or until the fish flakes easily when tested with a fork and is opaque all the way through.Any good Fast and easy fish recipes out there ? I will be using Cod fillets?

Fish and chips
COD FISH - WITH TOMATOES
2 lbs. cod fish
2 tbsp. vegetable oil
2 c. plum tomatoes
1 tsp. oregano
1 tbsp. parsley
1/4 tsp. salt
1/4 tsp. pepper
Rinse fish in cold water several times. In a large baking dish add oil and place cod fish in a layer. Add tomatoes, oregano, parsley, salt and pepper. Cover with aluminum foil and bake at 350 degrees for 20 minutes. Remove foil; continue to bake 10 minutes. Serve at once.

Man I love to use cod when I make fish and chips. Look on the internet for a simple beer batter, awesome!
fry them. season them with salt and lemon pepper and bread them in corn meal. then, fry them in a oiled skillet until browned. drain them on a paper towel.
You could wrap each fish fillet in foil and place slice of lemon on top along with a sprig of thyme or add about 4 drops of lemon juice to the fish. Or just add the lemon to it if you want. Wrap it up tightly and bake it in the oven at 350 degrees for around 20 minutes or until the fish is flaky and white.
Broiling is very easy and fast. The basic ingredients are spices, butter, and lemon juice.
Decide what kind of seasonings/spices you want to use. Look in your spice rack and see what looks good to you. Old Bay is a great seasoning for fish.
Generously sprinkle seasonings on both sides of fish.
Place fish on broiling pan.
Place a slice of butter (I use real butter) on each filet (not too little, not too much)
Place in preheated oven.
You can flip the fish halfway through, but don't need to.
They will be done in about 5-10 minutes. Check for doneness with a fork- when the fish is white and flaky, it's done. Don't cook it too long, or it will dry out.
Put a couple of squirts of lemon juice on the filets.

First of all marinate it your own way.
You may use soy sauce, salt, black pepper powder to taste.
Add some cooking oil in the frypan and let it be hot.
Add sliced garlic, ginger and onion and fry them a little
until they are golden brown.
Add fish fillet and pour some lemon juice if you like.
You may add some turmeric powder %26amp; cinnamon powder
if you like. Add salt %26amp; pepper to taste.
If you like it to have somewhat gravy, you may add some
coconut milk.
Let it cook according to your choice, ie, medium cooked
or well cooked. Medium cooked should be better.

1 1/2 pounds cod fillets
1 x salt and black pepper
1 teaspoon sage
1/2 cup swiss cheese grated
1 cup sour cream
Directions
Preheat oven to 350 degrees F.
Wash and dry codfish. Sprinkle both sides with salt, pepper and sage.
Place in greased shallow baking dish.
Sprinkle cheese on top and cover with sour cream.
Bake 25 minutes.

Vidalia Onion Cod
Ingredients
4 cod fillets
1/4 cup shredded carrots
1 sliced onion
1/2 cup Vidalia庐 Onion Dressing
2 Tbsp. lemon juice
Directions
Place cod in 9 x 13 baking pan; top with carrots and onion. Pour Vidalia庐 Onion Dressing over top; sprinkle with lemon juice. Bake at 350掳 for 20 minutes or until fish flakes with fork. Makes 4 servings.

Parchment paper
1 bulb fennel, cored and thinly sliced
1 large onion, thinly sliced
4 large cloves garlic, chopped
1/2 cup pitted and chopped good quality black and green olives
2 pounds cod fillets, cut into 4 portions (get thick pieces from the center cuts rather than tail-end pieces)
Salt and pepper
1/4 cup flat-leaf parsley, a generous handful, chopped
Extra-virgin olive oil, for generous drizzling
1 lemon
Preheat oven to 400 degrees F.
Rip off 4 sheets of parchment paper, each a little over a foot long.
Make layered stacks dividing the fennel, onions, garlic, olives, and cod among the parchment pieces, working in the center of each piece of paper. Season the cod with salt and pepper and top with parsley. Drizzle extra-virgin olive oil liberally over the fish portions. Fold the top and bottom edges together and crease several times then crease up the ends of the packets. Arrange the packets on the baking sheet and place in the center of the hot oven.
Bake packets 20 minutes. Serve a packet per dinner plate and cut open at table. Cut lemon into wedges and serve to squeeze down over the hot fish.

copped coriander mix with lime pour over cod and steam for the butter sauce, fry garlic and onion diced until there crispy add butter and let cook until the butter starts to look burnt looking
ps the butter wont taste burnt and will give a lovely colour to your dish
