im fixin to get married and i want to try new things fast and easy and i dont reall yknow how to cook good meals...I Need good fast and easy recipes..?

Spaghetti Pie... it tastes better the 2nd day... so make ahead!





Italians are apt not to waste anything, especially not leftover pasta (if there is any!). A dozen eggs and lots of parmesan cheese envelop the spaghetti in this recipe to create a perfect one dish meal. If you don’t have leftover spaghetti, feel free to make up a new batch. We won’t tell. Served warm or at room temperature, spaghetti pie can be a great appetizer or main dish served with a crisp salad.





12 servings





Ingredients





3 tablespoons butter, softened


1 pound spaghetti


salt, for pasta


12 eggs, lightly beaten


1 ½ cups grated parmesan cheese


¼ cup extra virgin olive oil


1 garlic clove, very finely minced


½ cup Italian parsley, chopped


salt and freshly ground pepper, to taste


1 cup mozzarella cheese, shredded





Equipment





9” x 12” baking dish, preferably glass€





Preparation





Lightly grease the inside of a 9” x 12” baking dish with the butter. Preheat the oven to 350° F.





Prepare the spaghetti according to the package directions and undercook by 2 or 3 minutes. It should be very al dente. Drain and rinse with cool water. Set aside.





Beat the eggs lightly to combine. Stir in the grated parmesan cheese, extra virgin olive oil, finely minced garlic, parsley, salt and pepper.





[Chef’s Note: Be sure not to add too much salt as the cheese has plenty of salt already.]





Add the egg mixture to the spaghetti and mix until all the spaghetti is well blended with the eggs. Pour into the buttered baking dish and spread the spaghetti mixture evenly in the pan. Cover with foil and bake for 40 minutes or until the eggs are completely set. Uncover the spaghetti pie and sprinkle the shredded mozzarella cheese over the top and bake, uncovered, for another 5 minutes or until the mozzarella is melted and slightly browned. Remove from the oven and cool.





Service





Spaghetti pie is best served at room temperature. It can be kept in the refrigerator for up to 3 days. If longer storage is required, it can be wrapped in plastic wrap and then in foil and placed in the freezer for up to a month. Thaw and bring back to room temperature before serving.





Variations





Spaghetti pie is one of those delightful recipes that can be creatively adapted to individual tastes. Feel free to add your own special ingredients such as pepperoni, prosciutto, maple ham, sun dried tomatoes, blanched vegetables or other types of grated cheese. You can also substitute whole wheat or spinach spaghetti, or even linguine or fettucine.

Betty Crocker actually has a cook book called Good and Easy cook book. You may want to snoop around at a book store for it. If you can watch some of the food network shows, like Rachel Ray, she has some great ideas and any recipe on those shows can be gotten off line. Check with your local college. Many have adult education courses and there may be one on beginner cooking. Also, many products like Bisquick or canned soup and even boxes of cheese have recipes on them. They pay a lot of money to folks to develop those recipes. They are usually simple and good. My 2 daughters used Bisquick and the recipes on there a lot. And once you start to cook, you will get the hang of it and will want to experiment. There are tons of recipes on line, and great cook books at libraries and even second hand stores carry book, for cheap. Check out Goodwill or Salvation Army stores
Chili


1 lb ground beef


1/2 white onion, chopped


2 cloves garlic, minced


1 can tomato sauce


1 can tomato paste


1 can diced tomatoes


1 can black beans, drained


1/2 package chili seasoning mix


--Brown ground beef in pot with onion and garlic. When beef is cooked thorougly add rest of ingredients and stir to combine. Simmer over medium-low heat for at least 15 minutes stirring occasionally. The longer it simmers, the better.





One of my mom's favorite things to do is buy an already cooked rotisserie chicken. You can have that for dinner one night with salad, baked potatoes, bread, etc. The leftovers she shreds and uses within a few days in cooked egg noodles for chicken and noodles.





These potatoes are a great, quick side dish for any sort of meat. Wash and cube 2 potatoes. Place pieces into microwave safe bowl. Microwave for 4 minutes, stir, and microwave for another 3-4 minutes. While microwaving potatoes, heat oil or butter over medium-high heat in a skillet. Add potatoes to skillet straight from microwave and fry until as crispy as you like them. I like them almost entirely brown so I fry them for about 10 minutes. Season with salt, pepper, oregano, basil, parsley, garlic powder, and/or paprika.





Chicken Fried Rice


3 chicken breasts (in bite size pieces)


1/4 cup onions (chopped)


1 large carrot (cubed)


1/4 cup green onions (chopped)


4 cups cooked rice


2 1/2 teaspoons salt


4 1/2 tablespoons butter (softened)


1/2 teaspoon oil


2 1/4 teaspoons sesame seeds


1/4 teaspoon pepper


2 teaspoons soy sauce


2 eggs


--Heat wok to medium high heat. Spray with cooking spray and scramble the eggs. Once done, chop and set aside. Add oil to wok and sauté chicken, onion, green onion, and carrots until done. Return eggs to wok and mix well. Mix rice with other ingredients. Add sesame seeds, salt, and pepper. Stir in butter and soy sauce. Mix well and let sit for 5 minutes before serving.


*I made this without the carrot and with ALOT more soy sauce. Adjust to your taste.

Sausage balls - just sausage, biscuit mix, and cheese. Mix, roll and bake. It's the easiest thing in the world, and surprisingly good.





Baked French toast casserole - make it tonight, stick it in the oven tomorrow. Serve it with a spoon.





Hash brown casserole. It has a base of shredded potatoes, topped with ham, cheese and eggs. We like to add onions (saute them first), broccoli, green or red peppers, and whatever other veggies or breakfast meats we have on hand.





Mini croissant chicken salad sandwiches. It's amazing what the addition of a ';fancy'; croissant can do for chicken salad. Cut them in half if they're too large.





Someone mentioned a fruit salad - I don't want to steal their idea, but here's a great, easy, FAST version. Drain and mix a can of pineapple tidbits, clementines or mandarin oranges, and sliced peaches (cut them into smaller pieces first). Add 1 small container of vanilla yogurt and a tablespoon or two of instant vanilla pudding mix. Stir until it thickens slightly. UM I AM 13 BUT I LUV FRENCH TOAST AND all I do is put

then u scramble them ...and then u put vanilla extract and cinnomom (sp)


and then u dip the bread in it and then just put it in the pan but put the stove like on 4 or 5 and put butter and when the butter sizzles then dip the bread and then put it in the pan and just let it cook and dont 4 get 2 flip it
Buy some pre cooked pie shells and make a simple quiche, Throw together some eggs, ham, onions, cream, and some flour, salt pepper and bake. Not much mess or time to make and cooks up great. ( let the store bought dough thaw a little and pinch it with your fingers before you cook it and it will look like you make it)

A good fruit salad with baked cream cheese french toast, its sooo good and filling.
Cream Cheese Spinach Casserole





2 packs frozen chopped spinach/ thawed and drained dry


1 stick butter cut in half


1 8oz cream cheese , soft


2 cups crushed salad croutons whatever flavor you like the most. I prefer garlic and butter flavor :)





make sure spinach is drained and squeezed dry, Place spinach in 2 qt bowl , adding the cream cheese and half a stick of soft butter, mix well . Butter a casserole dish then add mixture and pat into pan then add crushed croutons on top and melt the other 1/2 a stick of butter and drizzle over croutons. bake at 350 % til cheese is bubbling and topping is golden brown.
I am a huge fan of a brunch coffee cake. I normally do things from scratch, but if you are looking for super fast and super easy...... do Sandra Lee's Semi-Homemade recipe - there is a picture of it - and it looks spectacular, like you spent hours on it! :)

chili paste (tablespoon of I use Huy Fong Sambal Oelek, Chili Paste)


Uncle Ben's Brown Rice (Microwave in bag)





Drain juice from cans and add 1-2 tablespoons cornstarch, mix





Cook beans, tomatoes till bubbling. If you would like it thicker and more sauce, add cornstarch mixture, stir till the sauce comes out clear.





Meanwhile, microwave brown rice for 90 seconds. Place beans mixture on top or mix together. This makes 2 meals for me.What are some super fast, tasty and healthy dinner recipes?
On a lazy night, I like to fix any type of whole-wheat pasta (such as fettechini) and add some of lighter-on-the-calorie spaghetti sauce. Add some mushrooms or olives for extras. If you need a topping, add 2% mozzerella.





Tasty! It may not be the healthiest, but it's not too bad.





Oh, and make sure you get a good brand of whole-wheat pasta. My experience with store-brand pasta was bad.

Mushroom Chicken





4 chicken breast (or any pieces you like)


1 can cream of mushroom soup.


1 can water





Place chicken in crock pot (or sauce pan for stove top cooking)


mix soup %26amp; 1 can of water together


pour over chicken


cook on medium heat until boiling then reduce heat and cook until chicken is really tender %26amp; falling apart.





Serve over noodles or rice or dressing....or???








CHILLI DOG CASSEROLE


1 pkg. (8) hot dog buns


1 pkg. (8) hot dogs (use more if you like)


1 can Chilli (15 oz. without beans, use more if you want)


1 small onion (chopped)


2 cups shredded cheese


mustard








DIRECTIONS: Pre-heat oven 350 degrees


In a 9'; x 13'; baking pan, break up hot dog buns (bite size) and spread in pan.


Cut up hot dogs (about 1/2'; size) spread over buns.


Spoon/spred chilli over hot dog/buns.


Sprinkle onions over all.


Squirt mustard over entire mixture (don't spread...just make a few lines both ways across mixture)


Cover with shredded cheese.


Bake until cheese is melted and bubbly.


(Hint: If using extra hot dogs %26amp; chilli, don't add extra buns.)





EASY BEEF STROGANOFF





Ingredients:





3/4 lb ground beef


1 jar Heinz HomeStyle Savory Beef Gravy (12 oz Jar)


1 can mushrooms, drained (7 oz can)


1/2 cup sour cream


4-6 cups hot cooked noodles


salt %26amp; pepper, to taste





Instructions:





In a medium skillet, cook ground beef over medium heat until browned and thoroughly cooked. Carefully drain liquids and return to stovetop. Stir in Gravy and mushrooms, and bring to a simmer, stirring occasionally. Remove from heat and stir in sour cream, until thoroughly combined. Add salt and pepper, to taste, and serve immediately over hot noodles.





Preparation Time: 1-15 minutes


Cook Time: 25+ minutes

Mix one can of good baked beans


We use a good sized can of beans (14-16 ounces, I think) and


get a kind that we like (maybe with brown sugar, onion, and bacon).


There are several kinds of good baked beans.





and a package of Oscar Meier Weiners (all sliced up).





with a can of whole kernel corn (drained)





Any way, heat up these three ingredients, and serve with brown bread


(maybe toasted ?) and a glass of milk.





It doesn't get any easier than this, and is suprisingly good!





P.S鈥?.Might put ingredients in a casserole dish and top with corn muffin mix.

POT ROAST


Your choice of beef (to fit crock-pot)


1 pkg. dry Ranch dressing mix


1 pkg. dry Italian dressing mix


1 pkg. dry Brown Gravy mix


1 cup water


Put beef in pot.


Mix together all the dry mixes鈥?then add water 鈥our over meat and cover %26amp; cook on high 4-6 hours.


Until meat is tender.


The first time I mad it I didn鈥檛 have the Italian Dressing mix鈥?so I added a pkg. of Onion Soup Mix鈥?I have to say I liked that better.


If you use more water you might want to add more Brown Gravy mix鈥?to make a thicker sauce. Was gonna add


potatoes and carrots鈥ut never got around to it.








HASH BROWN CASSEROLE





2 lbs. frozen shredded hash brown potatoes (thawed)


1 bunch green onions, chopped


sweet pepper chopped (red 鈥?green 鈥?yellow 鈥?orange 鈥?or a mixture of all)


1 lb. Sausage, cooked until pink disappears, crumbled


1 cup ham cubes


4 slices crisp bacon, crumbled


1 small can sliced mushrooms


1 small can sliced black olives


2 鈥?8oz. packages of shredded cheese


陆 cup milk


12 eggs beaten


Tabasco (optional)


sour cream %26amp; salsa (optional)





Grease a 9 x 13 baking pan, wipe excess with paper towel.


Spread potatoes on bottom (cand be lightly browned in a skillet first if desired)


Sprinkle sausage over potatoes鈥hen


Peppers鈥?br>

Mushrooms鈥?br>

Ham..


Onions (reserve about 录 cup)


Mix eggs %26amp; milk together鈥︹€?I added about 2 TBLS. Tabasco鈥ore to your taste鈥?pour slowly over all.


Cover with shredded cheese鈥?then sprinkle over all


Remaining onions鈥?br>

Olives鈥?br>

Bacon鈥?br>

Cover and refrigerate overnight.


Uncover and bake at 375 degrees for 35 鈥?45 minutes鈥ntil browned and cheese is melted.


Serve with sour cream and/or salsa.








OLD SETTLER鈥橲 BEANS


INGREDIENTS:


1/2 lb. ground beef1/2 lb. bacon


1 chopped onion


Brown in skillet and drain excess grease.





ADD:


16 oz. can Red Kidney Beans (drained)


24 oz. can Pork %26amp; Beans (drained)


1/2 cup white sugar


1/2 cup dark brown sugar


1/4 cup Catsup


2 TBLS. Molasses


1/2 tsp. dry mustard





Mix Thoroughly !


Cook in a crock pot until...hot...hot...hot!








MARINATED VEGGIE SALAD


1 lb. can French style green beans


1 lb. can small peas


1 lb. can white corn


1 - 4oz. jar pimento (chopped)


1 cup shopped onion


1 cup chopped celery


1 cup chopped green pepper


1 cup sugar (I used artificial sweetener)


2/3 cup vinegar (I used red wine vinegar)


1/2 cup cooking oil


1 tsp. salt


1 tsp. pepper





1.)Pour green beans, peas, corn %26amp; pimento in a colander to drain over a


large bowl. Discard 1 1/2 cups of liquid.


2.)Put veggies in a large bowl and fold in onions, celery and green


peppers.


3.)Mix together thoroughly the remaining ingredients and toss with


veggies.


4.)Cover and let sit over night in refrigerator. (The longer it marinates the better.)





Desserts/Snacks








POUND CAKE





Combine:


2 sticks butter


1 2/3 cup sugar





Beat in:


5 eggs (1 at a time)





Add:


2 cups sifted flour


1 teaspoon vanilla


1 teaspoon rum extract





Mix thoroughly and bake 1 hour at 325 degrees.

    Strain it, better if you let it sit and drain a while. I just cut the package and put on the dish rack to drain. Then cut up garlic and grate ginger. Put little extra virgin olive oil in wok (pan) and high heat, when hot add garlic and ginger. Oh, you can put a splash of soy sauce too if you want. Just a little. Subtle flavours. When getting a little brown, throw in blocks of tofu. Use spatula to slice tofu into thick pieces and lay them flat. Let them fry awhile (can put a lid on if you want), then flip them over and that's it. Done. Put it on her rice or veggies or whatever else she's eating. I do this almost every day and it's fast, easy. I have no time for anything fancier as I'm cooking for three and my daughter loves tofu.Does anyone have short, simple and fast, easy recipes for Tofu.?
    This recipe is extremely easy and takes about five minutes.





    You need:


    Firm/extra firm tofu (it doesn't matter how much)


    Soy sauce


    Sesame oil


    Pasta sauce (optional)





    What you do is cut up the tofu into sticks about the size of fish sticks. Put them in a baking pan and pour soy sauce all over them. Drizzle some sesame oil over top. Bake them at 350 degrees for about 4 minutes. Eat them warm, or let them cool and dip them in pasta sauce. They make a great grab-and-go lunch!
    Barbecue Tofu Sandwiches


    ';Finally a veggie sandwich with true barbeque flavor!';





    INGREDIENTS


    1 (12 ounce) package extra firm tofu


    3 tablespoons vegetable oil


    1 onion, thinly sliced


    1 1/2 cups barbecue sauce


    6 hamburger buns





    DIRECTIONS


    Drain the tofu between paper towels until most of the water has been squeezed out.


    Slice tofu into 1/4 inch thick slices.


    Heat vegetable oil in a large skillet, fry tofu strips until golden brown on both sides. Add onion and cook for a few minutes, until onion is at your desired consistency.


    Pour in barbeque sauce (use more or less, according to your taste). Cook the mixture for ten minutes on low and serve on buns.
    Tofu Nuggets: It's very easy and I think your daugther will love it!!





    Kid-friendly tofu nuggets are reminiscent of chicken nuggets and can be dipped in ketchup, barbeque sauce or ranch dressing.





    INGREDIENTS:





    * 1 block firm or extra-firm tofu, pressed


    * 1/3 cup soymilk


    * 2 tbsp mustard


    * 1 tsp onion powder


    * 1 tsp garlic powder


    * 1 tsp dried parsley (optional)


    * 1/2 tsp salt


    * 1/4 tsp black pepper


    * 1 tbsp nutritional yeast (optional)


    * 3/4 cup bread crumbs





    PREPARATION:


    Whisk together the soymilk, mustard, nutritional yeast and spices until smooth in a wide bowl. Place bread crumbs in a separate bowl.





    Coat each piece of tofu with soymilk and mustard mixture first, then coat with bread crumbs.


    Fry in oil until golden brown, serve with ketchup, barbeque sauce or other dipping sauce and enjoy!





    For a lower fat alternative, lay tofu piece on a covered baking sheet and bake at 350 degrees for 25 minutes, turning once, until golden brown.

    You can always buy the tofu that is already seasoned. Just toss it into a salad or stir fry. Or you can use regular firm tofu, press it to get all of the excess liquid out then coat it in some Cajun seasoning and blacken it. That is relay good on a Cesar salad, even better if you throw the Cesar salad in a wrap!... If she is a vegan too, you can get eggless cesar dressing.
    I love this recipe... it is so easy to make and kids love it. Even my mom, who hates tofu loves it.





    Cheesy Pasta Bake





    Ingredients (use vegan versions):





    1 box Mori Nu tofu, extra firm


    enough pasta to fill an 8x8 pan (hand full)


    8 ounces of your favorite marinara


    1/2 block of vegan gourmet mozzarella


    spices: parsley, basil, garlic


    optional: cayenne





    Directions:





    Cook the spaghetti halfway. You don't want it to be mushy once you bake it.





    While that's cooking, drain the box of tofu and put it into a medium/small bowl. Squish with a fork into small pieces.





    Add the parsley, basil and garlic (add more of the spices you like best). I mix in a lot of all three. Blend with your fork but don't squish the tofu into too tiny of pieces.





    Then, grate your mozzarella. Use 1/3 to 1/2 of a block of vegan gourmet mozzarella. Put aside.





    Drain pasta. Put the pasta into the pan. Add all of the tofu ricotta mix. Mix them together.





    Now pour your pasta sauce on top of the pasta/ricotta mixture. Pour a little more sauce than you think, so it doesn't dry out.





    Mix all three ingredients well. You can even put some of the extra ricotta on top, if you had any left over.





    Once you've mixed the pasta, ricotta and sauce so that it's equally spaced in the pan, simply add the vegan gourmet mozzarella on top. Use as much as you like.





    It's important to spray the top of the cheese with your Pam or other oil spray. This makes the cheese on top melt smoothly and have a golden color when it's done.





    Bake on high, at least 400 degrees (even up to 500) until it bubbles. Don't be afraid to let it cook until it bubbles and starts turning brown.





    Serves: 4





    Preparation time: 30 minutes








    If your daughter eats cheese then you can use regular cheese and skip the PAM.


    I like to add some mushrooms and black olives. Or you could even add some squash or eggplant to it.

    I f you have any onions and green pepppers sautee those in 2 tablespoons of oil til they are cooked to your liking, take them out of the pan cut up steak in long strips and sautee til calmost cooked, throw your pepper and onion s back in , add a small can of beef broth,and simmer...Make some buttered noodles or rice...than use cornstarch or flour to thicken your beef gravy.     Bring the grill inside
    If its too hot there, like it is here, you don't want the oven on either. I would put it in the slow cooker, with onions, and your favorite seasonings, with cut up potatoes, and carrots. A little celery, for taste is also good. Its easy and fast for a day that's too hot to spend time outside or in the kitchen for any long periods of time!! Its also good to throw together before leaving for work in the morning, and then its all done when you get home!!
    Cut it into bite-size chunks and stir-fry w/some veggies (use terriyaki or soy sauce when cooking)

    Healthy Dog Treats





    2 cups whole wheat flour


    1/2 cup flour


    1/4 cup cornmeal


    1/4 cup sunflower kernels, finely chopped


    1 t. salt


    1/4 cup molasses


    2 eggs, beaten


    1/4 cup milk


    2 T. oil





    Mix all ingredients, adding more milk if needed to make dough firm. Roll out onto a floured surface to a 1/2'; thickness. Use any shape cookie cutter to cut out biscuits, but bone shapes are fun. Bake on ungreased baking sheets at 350 for 30 minutes or until lightly toasted. To make biscuits harder, leave in oven with the heat turned off for an hour or more.





    GOOD DOG BISCUITS


    1 3/4 cup whole wheat flour


    1/2 cup oatmeal


    1/2 cup cornmeal


    1/4 cup liver powder (available at


    health food stores)


    2 tablespoons brewer's yeast powder


    1/4 cup bone meal powder


    3 tablespoons powdered milk


    2 eggs, lightly beaten


    3 tablespoons wheat germ oil (you may substitute bacon drippings)


    1/2 cup water


    This healthy and economical treat is reserved for your four-legged friends only!


    Your dog will thank you if you make a double batch.


    Preheat the oven to 325~F.


    In a large bowl or in the food processor, combine the flour, oatmeal, cornmeal, liver powder, brewer's yeast, bone meal, and powdered milk (may also add beef or chicken bouillon cubes).


    Stir in the eggs, oil, and water and mix thoroughly.


    The dough will be very stiff and dry (much like dog biscuits!)


    Remove the dough to a lightly floured surface or pastry cloth.


    Roll or pat it into a rectangle 1/4 to 1/2 inch thick.


    Cut into bone-shaped biscuits with a small knife, or use a bone-shaped cookie cutter.


    Re-roll the leftover scraps of dough and cut into shapes until all the dough is used.


    Place on a lightly greased baking sheet and bake for 40 to 50 minutes until brown and dried through.


    Cool on a rack.


    Yield: About 12 large bones or 24 small ones.





    BREAD MACHINE DOG BISCUITS





    3/4 cup beef stock


    1 egg


    3 tablespoons bacon grease


    1 1/3 cup all-purpose flour


    1 1/3 cup whole wheat flour


    1/4 cup nonfat dry milk


    1/4 teaspoon garlic powder


    2 teaspoons yeast





    Place ingredients in bread pan according to manufacturers directions and


    press ';Dough'; cycle. When machine beeps, remove dough to lightly


    floured countertop and with a rolling pin, roll dough out to 1/4';


    thickness. Using a dog bone cookie cutter (or any small seasonal cookie


    cutters), cut out dog biscuits and place on a lightly greased cookie


    sheet or one sprinkled with cornmeal. Re-roll scraps and repeat till


    all dough is used up. Place in a warm location and let rise 30 minutes.


    Bake at 325 for 30 minutes until brown and no longer soft. Place on a


    rack to cool. Store in an airtight container.

    3 boneless chicken breast halves (6 to 8 ounces each)


    Coarse salt and ground pepper


    2 tablespoon olive oil


    1/2 pound fettuccine


    4 cubes frozen pesto (1/2 cup)


    1/2 cup heavy cream





    1. Place chicken breasts between two pieces of plastic wrap.With a meat mallet or heavy skillet, pound chicken to an even 3/4-inch thickness. Season with salt and pepper.





    2. Heat the oil in a large nonstick skillet; cook the chicken until golden brown and cooked through, 3 to 4 minutes per side. Slice each piece across the grain into 4 or 5 strips; cover to keep warm.





    3. Meanwhile, cook pasta according to package instructions. Reserve 1/4 cup cooking water. Drain pasta and return to pot.





    4. In a small saucepan, heat pesto over low until liquefied. Stir in cream; heat until warm.Toss pasta with reserved cooking water and half the sauce. Divide among shallow bowls; top with chicken. Drizzle with remaining sauce
    Balsamic Lemon Chicken





    1/2 cup olive oil


    1/4 cup lemon juice


    2 Tbsp. balsamic vinegar


    1 tsp. lemon zest


    1 Tbsp. dry basil


    2 cloves garlic, minced


    1/2 tsp. salt


    1/4 tsp. pepper


    4 whole boneless chicken breasts, halved





    Mix all ingredients and pour over chicken. Broil in 9x13” pyrex dish for 15 minutes each side. Lest rest 10 minutes, slice in strips.

    4 boneless, skinless chicken breasts, filleted into 2 pieces and pounded thin


    ¾ cup Rondele or Alouette Garlic and Herb cheese spread


    2 eggs, beaten


    2 Tbsp. milk


    2 cups seasoned dry bread crumbs


    1 stick butter or margarine, melted


    1 Tbsp. minced garlic





    Preheat oven to 375ºF. Spread flavored cream cheese on each of the 8 filets of chicken and roll them up, securing with a toothpick. Combine eggs and milk to make an egg wash. Dip each piece of rolled chicken into egg wash, then into seasoned bread crumbs. Place chicken into greased 9”x13” a baking dish.





    Stir minced garlic into melted butter, stir well. Pour the mixture over the chicken and bake uncovered for 45-55 min, or until juices run clear. Do not turn them over during the baking!

    Tuscan Farmhouse Chicken





    4 - 6 boneless, skinless, chicken breast


    4 oz extra virgin olive oil


    1 tsp. kosher or sea salt


    1 tsp. coarse black pepper or milled pepper


    2 Tbsp. minced garlic


    1 cup diced onions


    1 cup sliced mushrooms


    1 cup artichoke hearts or bottoms, quartered


    1 lemon (zested for garnishn; squeeze juice for sauce)


    1 tsp. tarragon leaves


    1 tsp. oregano


    ½ cup chicken stock


    3 oz butter


    1 Tbsp. chopped parsley





    Trim excess fat from chicken breast and pat dry.


    Heat olive oil in a sauté pan over medium-high heat.


    Add salt, pepper, garlic and sauté for about 30 seconds.


    Place chicken breasts in pan and lightly sear for about 2 minutes.


    Turn chicken over and add onions, mushrooms, artichokes and sauté for another 1 1/2 minutes.


    Squeeze juice from 1 lemon and add tarragon, oregano and half of the chopped parsley.


    Add chicken stock and allow to just boil.


    Whisk in butter to “cream” the sauce.


    Allow to reduce to a medium thick consistency.


    Garnish with remainder of parsley and lemon zest.





    Yields: 4 - 6 servings
    I usually hate when people give websites for answers, but here goes:


    Try www.kraftfoods.com, go to dinners, chicken. There are a few 15 minute one skillet meals that are good. I recommend cutting the chicken into bite size pieces so it cooks easier.
    This is easy and tastes like there's 10 ingredients in it when there is only 3 main ones.


    1 cup brown mustard (Gulden's or other similar)


    1 cup honey


    2 Tbs curry powder


    Salt and pepper to taste


    optional - 1 tsp garlic powder


    Mix this all up, pour over any chicken peices, thighs, breasts etc even tastes good with bar-b-qued chicken.


    Bake covered in a 350 degree oven till done. 45 min to an hour usually.





    When I'm really lazy, I take chicken pieces or even a whole chicken and shake on equal amounts of Italian seasoning, garlic powder, salt %26amp; pepper then bake covered if skinless, uncovered if not. It tastes great and any leftovers can be used in salads, sandwiches etc





    Mix one can of mushroon/cream of chicken/cream of celery soup and 1/2 can of milk, 1 tbs of Italian seasoning, salt and pepper. Pour over chicken pieces, cover with sliced onions and bake in a covered cassorole dish.

    i like just plain cooked chicken breast served with a side of your choice (noodles and sauce, or some potato thing is good) but this is what i do:





    preheat oven to 400


    always tenderize your chicken breast by hitting it with a wooden meat tenderizing hammer thing


    coat the chicken in mayo (make sure not to touch the utensil to the raw chicken and stick it back in the mayo jar- very unsanitary)


    salt and pepper the chicken, and also season with a bit of garlic salt if you like.





    the mayo keeps it really moist. then you can eat it like that or cut it up and put it in spaghetti sauce for chicken spaghetti or use it for chicken tacos or chicken salad, but it does taste GREAT alone.
    Lemon Marsala Chicken Breasts





    3 boneless skinless chicken breasts, cut in half


    1/2 cup butter


    1/2 cup oil


    flour


    2 eggs, beaten (did not add water..it's just the eggs beaten)


    Lemon Marsala Sauce:


    1/4 cup butter


    1 teaspoon minced garlic


    1 teaspoon minced shallot


    2 tablespoons flour


    1 1/2 cups chicken broth


    1/2 cup marsala wine (this is what makes it!)


    juice of 1 lemon





    Trim chicken.





    Cut chicken breast in half -- pound nice and flat.





    Heat butter and oil together in skillet.





    Dredge chicken in flour (mixed with salt and pepper to taste).





    Shake of excess flour.





    Dip chicken in beaten eggs.





    Saute in hot fat until golden on both sides.





    Drain on paper towel.





    Place in shallow baking dish.





    Make sauce;.





    Melt butter in saucepan.





    Add garlic and shallots. Saute for a minute.





    Add flour, stirring constantly. DO NOT ALLOW MIXTURE TO BROWN.





    Add stock and Marsala and continue to stir until smooth and slightly thickened.





    Add lemon juice.





    Pour sauce over chicken and bake until tenders (30 min).





    Preheat oven to 375.





    Sprinkle with fresh parsley and add fresh lemon slices when serving.
    just marinate it in italian dressing for one hour.poke chicken to let marinate go through it all.. then get a fry pan add butter to it.. put it on med heat.. put the chicken in the fry pan with the marinate sauce cover it...put it on low.. let it cook turning over throughout the cooking time. you may have to add a little more butter while cooking.. this is the easiest recipe i have .. you can make rice or mashed potatoes to go with it...I always par boil my chicken for 15 minutes before putting in a pan and marinating it but you dont have too. good luck..

    Coat whole mushrooms in fish batter and deep fry.





    Buy frozen ravioli, boil, drain, and toss with spaghetti sauce and a good quality parmesan cheese. Serve with salad and garlic bread.





    My guys love roast beef (cook in water and onion and beer if you like!) and add BISTO to the drippings when cooked to make gravy. Boil taters drain and serve with boiled broccoli with melted velveeta over it and carrots.





    Roast pork with applesauce, boil ribs and bbq and baste with bbq sauce. Marinate chicken breast in Italian dressing, bbq. Roast veggies in foil on the bbq with butter and seasonings. Salads of all kinds (keep various dressings/croutons/bacon bits around).





    Shishkebob with chicken/onions/mushrooms peppers/bacon...still have lots of summer to go! :~)





    For snacks, buy some grated tex mex cheese and sliced olives green and black...keep lots of flour tortillas handy and make grilled cheese and olives...coat with a little olive oil and garlic powder in a pan and flip.





    Squish some Philly cream cheese onto a plate, top with salsa, olives and tex mex cheese, nuke for 2 minutes and serve with nacho chips.





    Get a can of ham and a package of Philly cream cheese and two tablespoons or more of horseradish, and chopped chives, mix, let chill and serve with Triscuits.





    Make or buy Spinach Dip and serve with pumpernickel bread (make a bread bowl and serve for a party).





    Make bruschetta, (garlic bread topped with chopped tomatoes garlic/onion/olive oil, parsley/basil/oregano) on crispy bread this time of year is out of this world.





    Always keep fresh washed fruits and veggies handy too!
    CHICKEN BASIL


    Serves 4


    4 skinless chicken breasts (of approx. equal size)


    4 slices white bread


    3 rashers middle bacon


    Fresh basil





    Pre-heat oven to 180掳c


    Cut crusts off bread and blend in a blender to make breadcrumbs. (It is not advised to used packaged breadcrumbs for this recipe as they are too dry) Place in a bowl


    Chop the bacon really fine and add to the breadcrumbs. Finely chop the basil and also add to the breadcrumbs. Combine well.





    Place chicken breasts in a slightly greased oven dish and top with the mixture.


    Place in the oven with a bowl of water underneath the tray of chicken. This will help keep the chicken moist and succulent. (make sure the bowl is ovenproof)


    Bake for about 20-30 minutes depending on the size of the chicken breasts.


    Serve with Potato Bake (see recipe below), steamed snow peas, broccoli and honey sesame carrots.


    Steam the snow peas for about 2 minutes and the broccoli for 3 at the most. This will ensure that they stay green and crunchy., retaining their nutrients.


    I would recommend a nice crisp Sauvignon Blanc with this dish.


    POTATO BAKE


    5 large potatoes peeled and thinly sliced


    1 large onion peeled and thinly sliced into rings


    Salt and pepper


    Cream


    Butter


    Sharp cheddar cheese, grated or shredded (depending on what you call it!!!)





    Lightly grease the bottom of a medium oven dish. Place a layer of potato in the bottom of the dish. Then sprinkle some of the onion rings over the top of the first layer of potato. Season with a little salt and pepper. Repeat these layers until all the ingredients have been used finishing with a layer of potato, making sure no onion is visible.


    Randomly dollop bits of butter over the surface and drizzle with a little cream. Sprinkle the cheese over the entire surface and bake in a moderately hot oven for approximately 45 minutes or until potatoes are soft when tested with a knife.


    HONEY SESAME CARROTS


    Baby or Dutch carrots peeled and cut julienne style (matchsticks in laymen鈥檚!!)


    Honey


    Sesame seeds





    Steam carrots for about 2 minutes then toss in a warm pan with a little olive oil. Add the honey and allow this to melt and heat through. Sprinkle over the sesame seeds and serve immediately.





    CREAMY CHICKEN CARBONARA


    Serves 4 - 6


    50 gm fresh fettuccine cooked according to packet directions (if you don鈥檛 have fettuccine try angel hair)


    1 tblsp olive oil


    3 skinless chicken breasts diced


    1 medium Spanish onion finely diced


    2 cloves crushed garlic


    3 tsp mixed herbs


    6 rashers middle bacon


    2 cups button mushrooms sliced


    300 ml cream


    陆 cup white wine (try to use one that you will be serving with the meal)


    A little chicken stock powder


    Salt and pepper to taste.





    Heat oil in a large pan and add garlic, herbs and onion, then add the chicken and cook on medium-high heat until onion has sweated cook until chicken has lightly browned.





    Add the bacon and mushrooms and cook well. Reduce heat and add cream, heat through at a simmer. When cream is heated, add the wine and the stock powder. Make sure you don鈥檛 use too much stock powder or it will be too salty. Make sure you taste all the time. Simmer for about 7-8 minutes until all the alcohol has burned off and the cream has thickened.





    Serve over the drained pasta and sprinkle with fresh shaved parmesan cheese. Fresh crusty bread would be a lovely addition to this meal also.





    I would suggest a Semillon or a moselle with this dish. If you want a nice dry white would also be good.

    Serves 4 - 6


    500 gm fresh fettuccine cooked according to packet directions (if you don鈥檛 have fettuccine try angel hair or penne)

    3 skinless chicken breasts diced

    2 cloves crushed garlic

    200-300 ml cream (depending on how saucy you want it)


    Salt and pepper to taste

Reduce heat and simmer for about 7-8 minutes until tomatoes have collapsed and are heated through. Make sure you taste all the time. Add salt and pepper to taste. Add Tabasco or chilli to taste.


    Serve over the drained pasta and sprinkle with fresh shaved parmesan cheese. Fresh crusty bread would be a lovely addition to this meal also.


    BEEF SOUP


    500 gm chuck steak, diced


    1 medium onion, finely chopped


    1 tblsp oil


    1 tblsp butter


    6 cups boiling water


    6 maggi beef stock cubes


    6 tsp paprika


    140 gm tub tomato paste


    陆 cup small pasta shells


    1 tin champignons, pieces and stems


    Salt and pepper to taste


    Fresh parsley, chopped finely


    Shaved fresh Parmesan cheese to serve





    Heat oil and putter in a large pot and add beef and onion. Cook until onion has sweated and beef browned. The beef doesn鈥檛 need to be cooked at this stage.


    Dissolve stock cubes in water and add to the pot. Add paprika and tomato paste. Bring to the boil and simmer for about 1 minute. Add the pasta, cover and cook until pasta is almost done, stirring occasionally. (about 8 minutes)


    While pasta is cooking, you may need to skim the surface from time to time.


    Reduce heat to medium, drain the champignons and add to the pot. Simmer for a further 3-4 minutes or until pasta is fully cooked.


    Remove from the heat and add the parsley.


    Serve in warm bowls and top with fresh grated or shaved parmesan cheese. Try some fresh crusty Vienna bread with this soup.





    The good thing about this soup is that is like a meal in itself. It is also a great winter warmer and quite delicious.


    Rosemary and Parmesan Crusted Lamb Racks


    Recipe serves: 4


    4 by 4 cutlets of Frenched lamb racks (trimmed of fat cap, and cleaned of excess fat)


    2 bunches fresh rosemary (strip leaves off and chop finely)


    2-3 cloves garlic (chopped finely)


    3 tbsps fresh grated parmesan cheese


    2 cups bread crumbs


    2 cups plain flour


    2 eggs


    Milk


    Extra virgin olive oil


    Butter


    Sea salt flakes


    Black peppercorn mill





    Preheat oven to 180 degrees (350 Fahrenheit).


    Remove the lamb from the fridge about an hour prior to cooking, this will ensure even cooking)


    Place eggs into a mixing bowl and beat slightly, add a good splash of milk and a couple tbsps of olive oil and mix well.


    Place bread crumbs in another bowl, add the parmesan cheese, garlic, rosemary, season liberally with salt and pepper and mix ingredients together.


    Take racks one at a time and roll the loin part in the flour, being careful only to get flour on the meat and not on the bones.


    Take the floured lamb racks and dip the floured part in the egg wash, allow excess to drip off for a couple of seconds and place the rack in the bread crumb bowl.


    Gently cover the wet part of the racks with the crumbs and gently push on the crumbs ensuring that the entire loin is crumbed.


    Once all the racks have been crumbed, place a pan on medium heat, add enough oil to cover the base of the pan and add a couple tbsps of butter.


    Lightly brown the racks on all sides and set on oven tray (make sure the racks are standing up straight, you may have to prop them against the edge of the baking tray).


    Depending on the size of the racks and degree of cooking bake for the following time.


    Rare: 12 minutes


    Med rare: 16 minutes


    Medium: 18 minutes


    Well done: 23 minutes


    Let the racks rest outside of the oven for about 5-8 minutes before serving. Racks can be either cut into cutlets for serving or left as a whole rack.


    Great with a rich red wine jus, and even better with a glass of Shiraz (Syrah) on the side.

    Southern-Stuffed Rosemary


    Ingredients


    2 (6-oz.) packages cornbread stuffing mix


    1 large egg, lightly beaten


    1/2 cup finely chopped pecans, toasted


    8 skinned and boned chicken breasts


    1/4 cup olive oil, divided


    1 tablespoon chopped fresh rosemary


    1 teaspoon salt


    1/2 teaspoon pepper


    1/4 cup grated Parmesan cheese


    1 (8-oz.) package sliced fresh mushrooms


    4 green onions, sliced


    1 (10 3/4-oz.) can reduced-fat cream of chicken soup


    1 cup chicken broth


    Garnish: fresh rosemary sprigs


    Preparation


    1. Prepare stuffing mix according to package directions, and let cool. Stir in egg and pecans.


    2. Butterfly chicken breasts by making a lengthwise cut in 1 side, cutting to but not through the opposite side; unfold. Spoon stuffing mixture evenly down center of one side of each butterflied chicken breast; fold opposite side over stuffing, and place in a lightly greased baking dish. Stir together 3 Tbsp. olive oil and chopped rosemary; brush evenly over chicken. Sprinkle chicken evenly with salt, pepper, and Parmesan cheese.


    3. Bake chicken, uncovered, at 400掳 for 20 minutes or until done.


    4. Saut茅 mushrooms and onions in remaining 1 Tbsp. oil in a large skillet over medium-high heat 5 minutes or until tender; stir in soup and chicken broth. Reduce heat, and simmer, stirring often, 5 minutes or until thoroughly heated. Spoon mushroom mixture evenly over chicken; garnish, if desired.

    Turkey and Stuffing Patties





    3 cups chopped cooked turkey


    2 cups leftover stuffing


    1/4 cup diced onion


    1/4 cup minced flat leaf parsley


    I small can water chestnuts, drained and chopped


    1 egg, beaten


    1/4 cup leftover gravy or milk


    Flour for dredging


    Butter and oil for sauteing





    Step: 1 Combine chopped turkey and stuffing in a bowl. Add beaten egg,


    gravy or milk,onion, parsley and water chestnuts.


    Step: 2 Mix very well with your hands to break up any stuffing lumps.If mixture is too dry add a little more gravy or milk.


    Step: 3 Form mixture into patties of equal size. Place some flour on a plate


    and coat patties on all sides. In a large skillet, melt equal parts oil


    and butter over medium heat.


    Step: 4 Fry patties until golden brown and heated through. Serve with leftover heated gravy or the sauce of your choice.
    I love having mac and cheese and serving it with a couple cans of tuna or a pound of ground beef mixed in...you can also add peas. I also have a Gourmet Tuna salad recipe that I love:


    2 6 ounce cans of solid white tuna.


    1/4 cup of pimento stuffed green olives, chopped


    1 stalk of chopped clery


    2 chopped green onions


    1/4 cup of slivered almonds


    2 tablespoons of diced capers


    1/4 cup of mayonaise


    1/4 cup of sour cream


    And an optional dash of worchestire sauce





    Mix all of the ingredients together and voila! Eat it plain or spread between two slices of bread for tuna salad sandwiches

    cold macaroni tuna salad: can of peas, can of tuna, chilled cooked macaroni shells (small size), chopped onion, mayo, chopped hard boiled egg, chopped celery, lawry's salt, paprika and pepper.
    Here's a good one, we call it Sunday Chicken.


    In a 9x12 baking pan put stove top stuffing ingredients, (don't cook it first) take boneless chicken breast and place them on top of the stuffing mix. Sprinkle with parmesan cheese, salt %26amp; pepper. Make instant(or real) mashed potatoes and spread it on top like you're icing a cake. Put in 425 degree oven for 30-40 minutes depending on thickness of the chicken. Now all you have to do is make a vegetable and you're done. Make extra, it's great for left overs.
    cook up a box of your fav noodles and put them in the fridge to cool. while noodles cool cook up 1-2 chicken breasts and cube it up. mix chicken and noodles add some dressing ( i prefer viva italian) and serve cold. It's fast and easy, also great on a hot day.
    SUPER EASY....all you need is a crock pot

    You cannot rush good turkey soup. Put all the bones and whatever meat is clinging to it in a large pot. Throw in a couple of celerys and an onion. Simmer for about 5-6 hours for the best broth. Drain all this through a colander into a large bowl. In the same pot, melt butter and a little olive oil. Saute onions and celery (diced) until tender. Pour broth back in and add sliced carrots. I put in leftover turnips, mashed potatoes, gravy, whatever is hanging around and simmer until the carrots are tender. Add 1 cup white rice and keep simmering for about 15 minutes. Add pieces of cooked turkey last and salt to taste.Got any good recipes(easy%26amp; fast) for turkey soup?
    TURKEY SOUP





    2 large turkey legs or carcass


    1 lb turkey meat (2 if using carcass)


    1 medium onion (diced)


    1/2 bunch of celery (diced)


    2 cans of chopped tomato


    1/2 pound of green beens cut in half


    1/4 pound green peas (preferably fresh)


    1 cup of chopped bell pepper


    1 medium parsnip


    4 medium carrots


    1 clove garlic


    1/2 cup white wine (cheaper the better)


    1/2 tbl spoon black pepper


    2 bay leaves


    1/4 cup barley





    Wrap the turkey legs in foil and cook in the oven on 200 for about 1 1/2 hours. Let cool.


    Pour the liquid from the turkey leg into a large pot. Seperate the meat from the legs and put the meat aside. Add the skin and bone to the pot. Fill the pot about 3/4 full with water, and boil for about an hour. Remove the bone and skin (I use a large pasta pot with a removable strainer in it, so you just lift out the strainer, dump it in the bin, and you're done).








    Add:





    Green beans


    Bay leaf


    Bell peppers


    Peas


    Barley


    Turkey meat (I quick fry turkey breast in a lightly oiled pan, and add it).








    Let simmer for about 1 1/2 hour stirring occasionally. Start tasting. When you are happy with the consistency of the broth turn of the heat. The pot should be between 2/3 and 3/4 full. Let sit for at least 2 hours. Stir occasionally.


    If you are going to err, err on the side of less broth. It may look like there isn't much, but there is a lot more than you would think. This is meant to be a very hearty soup.





    Slowly reheat when you are ready to eat and stir regularly. This will feed at least 8 very hungry people.





    It goes well with bread and butter for dunking.











    TURKEY SOUP





    Put turkey bones (with meat scraps) from 1 turkey into soup pot. Fill with water. Simmer for 2 to 3 hours to remove meat from bones. Strain out bones and fatty meat. Cut any turkey meat you like into bite-size pieces.


    To this broth add: 1 tsp. dried parsley 1 tsp. salt 1/2 tsp. pepper 1 stalk celery, diced 1 c. (about) turkey, diced





    In separate pans, boil: Potatoes %26amp; carrots, peeled %26amp; diced (about 3 c. cooked)





    Add egg noodles, potatoes and carrots to seasoned broth. Heat through and serve.





    Pearled barley may be added or substituted for noodles.






    My Turkey %26amp; Brown Rice Soup





    2 parsnips diced


    2 carrots diced


    2 ribs of celery diced


    1 yellow onion chopped


    1 bunch of fresh thyme tied together with kitchen twine so you can remove later. (the leaves will fall off the stems as it cooks)


    1 bay leaf


    6 cups of chicken stock (I like the organic low sodium kind that Pacifica makes)


    2 cups of shredded turkey


    1 cup of cooked brown rice(i use uncle ben's instant brown rice)


    2 tsp of sea salt


    1 tsp fresh cracked black pepper





    Combine the first 7 ingredients in a large pot including the salt %26amp; pepper, bring to a simmer and cook for 20 to 30 minutes until all veggies are tender. Add turkey and rice, continue to cook for an additional 10 minutes.



    Turkey Soup With Cheddar Dumplings





    1 tablespoon olive oil


    4 carrots, cut in half lengthwise and thinly sliced into half-moons


    1 onion, diced


    3 3/4 cups homemade or low-sodium canned chicken stock


    1 cup all-purpose flour


    1/3 cup yellow cornmeal


    1 teaspoon baking powder


    3/4 teaspoon salt, plus more for seasoning


    1 cup grated Cheddar cheese


    3/4 cup frozen corn, thawed


    1 large egg


    1/3 cup milk


    3/4 pound cooked turkey, cut into 1-inch cubes


    Ground pepper





    Directions:


    Heat oil in a large saucepan over medium-high heat. Add carrots and onion. Cook, stirring occasionally, 3 to 4 minutes. Add stock and 2 cups water; bring to a simmer. Cover, and cook until vegetables are just tender, 8 to 10 minutes.





    Meanwhile, combine flour, cornmeal, baking powder, and salt in a medium bowl. Stir in cheese and corn. Add egg and milk; stir vigorously to make a slightly sticky dough. Using lightly floured hands, form dough into 1-inch balls; set aside.





    Add the turkey to soup; season with salt and pepper. Bring to a gentle boil; add dumplings. Cover; cook until dumplings are cooked through, 5 to 6 minutes. Serve warm.





    Yield: 6 servings

    Pasta meals are cheap..even after adding things like cheese, since meat is the most costly part of the meal. When I'm trying to stretch my meat out, I'll cook recipes that I can cut my meat into small pieces, so that way I don't need as much. For example, adding sausage to rigatoni, but slicing it first.


    Here are a couple of other recipes:





    ***Carbonara Deep Dish Pizza***





    Salt


    2 packages fresh linguini, 9 ounces each


    3 tablespoons extra-virgin olive oil


    1/4 pound bacon, chopped


    3 to 4 cloves garlic, grated or chopped


    1/2 to 1 teaspoon crushed red pepper flakes, depending on how spicy you like it


    1/2 cup grated Parmigiano-Reggiano, a couple of handfuls


    Salt and freshly ground black pepper


    4 large eggs


    1/2 cup cream


    2 cups ricotta cheese


    A handful fresh flat-leaf parsley, finely chopped


    1 cup shredded provolone or mozzarella cheese





    Preheat oven to 425 degrees F.


    Heat water for pasta in large pot, salt it and add pasta for 3 minutes.





    While water boils, heat a large skillet with extra-virgin olive oil, 3 turns of the pan, over medium-high heat. Add bacon and brown, 3 to 4 minutes. Add garlic and red pepper flakes.





    Drain pasta, add to pan and toss. Stir in Parmigiano-Reggiano and season with salt and pepper. Beat eggs with cream and pour over top of pasta. Let eggs begin to set up, about 1 minute, and pat pasta into even layer to make the pizza pie crust. Place in oven and cook 5 to 6 minutes.





    Mix together the ricotta and parsley. Remove pie from oven and smooth the ricotta over the top. Scatter with the provolone or mozzarella and return to oven. Bake 8 minutes more until cheese is melted and golden at edges. Cut into wedges and serve.





    ***No-Pain Lo Mein***





    2 tablespoons (2 turns around the pan in a slow drizzle) vegetable or wok oil


    1 cup (2 handfuls) snow peas, halved on a diagonal


    1 red bell pepper, seeded and cut into match stick size pieces


    1/2 pound assorted mushrooms (shiitake, straw, enoki, or oyster), coarsely chopped, if necessary


    4 scallions, thinly sliced on a diagonal


    2 cups (about 4 handfuls) fresh bean spouts


    2 inches fresh ginger root, minced or grated with hand grater


    4 cloves garlic, minced


    1 pound lo mein noodles or thin spaghetti, cooked to al dente and drained well


    1/2 cup aged tamari soy sauce


    1 tablespoon toasted sesame oil, several drops





    Heat a wok-shaped skillet or large non-stick skillet over high heat. When pan is very hot, add oil, (it will smoke a bit) then, immediately add the snow peas, pepper, mushrooms, scallions, and bean sprouts. Stir fry for 1 minute to flavor the oil, then add the ginger and garlic, and stir-fry 2 minutes. Add the cooked noodles and toss with to combine. Add the soy sauce and toss the ingredients to coat noodles evenly with sauce. Transfer the lo mein to a serving platter and garnish with a drizzle of toasted sesame oil

    Minced Beef: Chilli (serve with rice or in wraps)


    Bolognese (pasta and garlic bread)


    Big Cottage Pie - add a dash of tabasco


    sauce to any of these dishes to give


    them a kick. Lots of creamy mashed


    potato. Serve with Veggies of your choice.





    I find the Chicken Tonight sauces are quite tasty (they are quick and you only have to add potatoes, pasta or rice to any of these to make a nice supper.





    Keep in lots of salad, veggies (potatoes esp. cos you can


    bake, chip, roast mash etc) and fruit.


    Why not ask your house guests if they have any favorite recipes that they can give you beforehand , that will help a little.





    Don't be afraid to buy shop bought pastry either. Cut pastry the size of a side plate fill with minced beef or chicken (in a sauce) turn over and seal to make a cornish pasty. This can be done for vegetarians as well.

    directions:


    smother chicken in mayo, dip in breading - bake at 350 for 30-40 minutes until well cooked. top with marinara and shredded mozza and put in oven for 5-10 minutes until melted. tastes good with pasta and garlic bread on the side.


    this is easy cause you can bread the chicken in the morn and put in baking dish, cover, and keep in frig until you are ready to cook it.
    BEEF STROGANOFF





    2 lbs ground beef


    1 bag wide egg noodles


    2 cans cream of mushroom soup


    1 (8 oz) canister of sour cream





    brown beef, drain. boil pasta, drain. Mix all ingredients and simmer unitl hot.


    Serves 6 easily!! I always serve with buttered bread and salad.

    I have plenty of recipes to give but I also have a suggestion, Why not once a week while your have guests you do a Huge roast of pork, beef, turkey or a whole chicken in the slow cooker. This if you do use it can be used for several meals if its big enough. Or if you dont have a slow cooker slow cook in the oven at 250 starting in the am at 8 til say ready to carve at 5. But let rest for 20 mins before carving any meat so the juices resettle back in the meat and make it super tender and juicy.





    Now for the recipes:





    3 -4 cans tuna in olive oil drained


    1 bag egg noodles


    2 cans of cream of mushroom soup


    1 bag frozen bag of peas, carrots or a mixxed veggieTHAWED


    1 c water





    Cook your noodles for 5 mins, and drain


    Combine the tuna, soup, and thawed drained veggies, til creamy, add half the water to thin and add more if you like it thinner. Add to greased casserol pan bake at 375 til bubble and glolden brown on top checking at 30 mins and top with cheddar cheese for a cheesy crust. Recipe from a good friend of the family.





    Serve with salad of choice, bread of choice and enjoy





    Orzo pasta 1 box cooked drained and add 1 tablspoon olive oil so it doesnt stick





    4 c cooked minute rice





    1 can basil, garlic and balsamic vinegar Hunts tomatos





    1 c thawed corn





    1 c diced mixed sweet bell peppers





    1 c fine diced red onion





    1 c thawed sweet peas


    *If you want to give this a twist add half a cup of your fav italian dressing to it, and add pepperoni, salami, sweet italian sausage, or spicy sausage. Ive even made this with left over chicken and steak. Also could add Feta, or fav cheeses, and olives of choice.





    Combine all in a very large bowl. add 1 tsp each of the following seasonings, salt, white pepper, garlic powder, basil';Fresh';, and parsley ';fresh';, Serve warm or Cold its a great main dish or can be used to accompany Fish of choice. Also great for those looking for something super light and healthy.

    1/2 pound leftover roast turkey meat, shredded


    1 1/2 tablespoons fresh lime juice


    2 tablespoons vegetable oil


    3 bell peppers (preferably red and orange), finely chopped


    1 garlic clove, finely chopped


    1/4 teaspoon ground cumin


    1 teaspoon dried oregano, crumbled


    1 (15.5 ounce) can black beans, rinsed and drained


    4 ounces corn tortilla chips (not low-fat)


    2 cups grated jalapeno Jack cheese


    1/4 cup chopped scallion greens


    1/2 cup chopped fresh cilantro


    1 cup sour cream


    2 teaspoons finely chopped pickled jalapeno


    Tomato salsa, for serving





    Preheat oven to 450 degrees F.


    Toss turkey with lime juice and season with salt and pepper.


    Heat 1 1/2 tablespoons oil in a 10-inch heavy skillet over moderately high heat until hot but not smoking, then saute bell peppers, stirring, until crisp-tender, about 3 minutes. Transfer to a bowl. Heat remaining 1/2 tablespoon oil in skillet over moderate heat and cook garlic, cumin, and oregano, stirring, 1 minute. Stir in beans and cook, stirring, until heated through, about 1 minute. Season with salt and pepper.


    Make 2 layers each of corn chips, sauteed peppers, beans, turkey, cheese, scallion, and cilantro in a 3-quart shallow baking dish. Bake nachos in middle of oven until cheese is melted, 6 to 10 minutes.


    Stir together sour cream and jalapeno to taste and serve on the side along with salsa.

    COLA CHICKEN

    4 skinless, boneless chicken breasts


    1 cup catsup


    1 12oz. can cola (pepsi, coke, etc.)





    Put chicken in a non-stick pan.


    Mix together catsup and cola, pour over chicken.


    Bring to a boil. Cover, reduce heat and cook 45 minutes.


    (turning chicken a few times, while cooking...to prevent from


    sticking to pan)


    Uncover, turn up the heat and continue to cook until the sauce


    becomes thick and adheres to the chicken.


    It turns into the most incredible BBQ sauce. Yummmm!





    You can double the recipe and use more pieces of


    chicken....wings...would be ideal...add some hot


    sauce....presto ';Hot


    Wings';!

    I tried this recipe with 'meatballs'....was equally


    as good...served over rice.





    I found another variation.....omit the catsup and add a small


    jar of Salsa (any variety).

    but...I added the spices from a MILD (I don't care for ';HOT';) Buffalo Wings packet...(the kind you get to bake in the oven).....I thought it was really good.....(but you/I can't find a 'bad' way to fix chicken).





    Finally....!! I fixed the 'SALSA' chicken......that's good , too.





    Another (bright)idea.....I thought of trying......replace the


    catsup with a bottle of Shrimp Cocktail Sauce...and add a bag of (pop corn) shrimp.....!


    Fixed the shrimp with cocktail sauce......eh...wasn't all that


    great...was OK...probably won't be fixing it again.





    Also tried beef stew cuts......that was pretty good.....I can see


    myself making this again.


    Served both over rice.....think the stew cuts would have been just as


    good over noodles.





    How about using the little cocktail weiners/sausages?











    CRUNCHY ONION CHICKEN





    1 1/3 cups French鈥檚 Original French Fried Onions


    4 boneless skinless chicken breast halves


    1 egg, beaten





    LIGHTLY CRUSH:





    Onions in a plastic bag.





    DIP:


    Chicken in egg





    COVER:


    With onion crumbs, press firmly to adhere to chicken.





    BAKE:


    Preheat oven to 400 degrees.


    Place chicken on lightly greased baking pan.


    Sprinkle with additional onion crumbs, if desired.


    Bake for 20 minutes or until no longer pink in center.








    Mushroom Chicken





    4 boneless/skinless chicken breast (or any pieces you like)


    1 can cream of mushroom soup.


    1 can water





    Place chicken in crock pot (or sauce pan for stove top cooking)


    mix soup %26amp; 1 can of water together


    pour over chicken


    cook on medium heat until boiling then reduce heat and cook until chicken is really tender %26amp; falling apart.





    Serve over noodles or rice or dressing....or???








    CHILLI DOG CASSEROLE


    1 pkg. (8) hot dog buns


    1 pkg. (8) hot dogs (use more if you like)


    1 can Chilli (15 oz. without beans, use more if you want)


    1 small onion (chopped)


    2 cups shredded cheese


    mustard








    DIRECTIONS: Pre-heat oven 350 degrees


    In a 9'; x 13'; baking pan, break up hot dog buns (bite size) and spread in pan.


    Cut up hot dogs (about 1/2'; size) spread over buns.


    Spoon/spread chilli over hot dog/buns.


    Sprinkle onions over all.


    Squirt mustard over entire mixture (don't spread...just make a few lines both ways across mixture)


    Cover with shredded cheese.


    Bake until cheese is melted and bubbly.


    (Hint: If using extra hot dogs %26amp; chilli, don't add extra buns.)





    ';Canned Soup';.


    (My Way!)


    Whatever cans of veggies I have, that I like, in cabinet it goes in the pot.....along with all the juices in the cans.


    Cook on stove top or Crock pot.


    Enjoy!





    Canned:


    corn


    peas


    carrots


    gr.beans (any variety)


    lima beans


    wax beans


    tomato (any variety)


    potatoes (whole or sliced...or both whatever you like)





    You get the idea....lol.





    Also add a package of shredded cabbage (cole slaw mix).





    You can even add a package of onion soup mix.





    If it gets to dry and needs more liquids....add tomato juice...V-8...etc.

    EASY BEEF STROGANOFF





    Ingredients:





    3/4 lb lean ground beef


    1 jar Heinz HomeStyle Savory Beef Gravy (12 oz Jar)


    1 can mushrooms, drained (7 oz can)


    1/2 cup sour cream


    4-6 cups hot cooked noodles


    salt %26amp; pepper, to taste





    Instructions:





    In a medium skillet, cook ground beef over medium heat until browned and thoroughly cooked. Carefully drain liquids and return to stovetop. Stir in Gravy and mushrooms, and bring to a simmer, stirring occasionally. Remove from heat and stir in sour cream, until thoroughly combined. Add salt and pepper, to taste, and serve immediately over hot noodles.





    Preparation Time: 1-15 minutes


    Cook Time: 25+ minutes














    ';Corny Beanie Weenies.';


    (from a country preacher in Mississippi鈥ife %26amp; 2 teenage sons)





    Mix one can of good baked beans


    We use a good sized can of beans (14-16 ounces, I think) and


    get a kind that we like (maybe with brown sugar, onion, and bacon).


    There are several kinds of good baked beans.





    and a package of Oscar Meier Weiners (all sliced up).





    with a can of whole kernel corn (drained)





    Any way, heat up these three ingredients, and serve with brown bread


    (maybe toasted ?) and a glass of milk.





    It doesn't get any easier than this, and is suprisingly good!





    P.S鈥?.Might put ingredients in a casserole dish and top with corn muffin mix.











    POT ROAST


    Your choice of beef (to fit crock-pot)


    1 pkg. dry Ranch dressing mix


    1 pkg. dry Italian dressing mix


    1 pkg. dry Brown Gravy mix


    1 cup water


    Put beef in pot.


    Mix together all the dry mixes鈥?then add water 鈥our over meat and cover %26amp; cook on high 4-6 hours.


    Until meat is tender.


    The first time I mad it I didn鈥檛 have the Italian Dressing mix鈥?so I added a pkg. of Onion Soup Mix鈥?I have to say I liked that better.


    If you use more water you might want to add more Brown Gravy mix鈥?to make a thicker sauce. Was gonna add


    potatoes and carrots鈥ut never got around to it.

    (All recipes are mixed the same.)





    Melt ingredients, seperately in microwave until runny.


    Mix together and pour into serving dish.


    Chill until firm, cut %26amp; serve.





    Chocolate Fudge:


    16 oz. container of Fudge Frosting


    1 bag of Chocolate Chips (any flavor you like)





    Peanut Butter Fudge #1:


    1 small jar Peanut Butter (18 oz.)


    2 bags of Peanut Butter Chips





    Peanut Butter Fudge #2:


    1 small jar Peanut Butter (18oz.)


    16 oz. container of White Frosting





    Marshmallow Nougat:


    1 small jr Marshmallow Creme


    1 bag White Chocolate Chips


    1 tsp. Almond Flavoring


    1 small bag Chopped Nuts





    (I've made this without the flavoring %26amp; nuts....I want to try


    rolling


    into balls and dipping in a chocolate coating....sounds good to


    me.)





    I've doubled all the above recipes. The Marshmallow Nougat


    recipe...doubled and added a container of white frosting (had an


    extra one....so thought....why not!)





    I use a double boiler..(prefer the double


    boiler)...add chips in first ...then rest of


    ingredients.....saving


    nuts and flavorings for last.








    CAKE MIX COOKIES


    White Cake Mix


    2 Tablespoons water


    2 eggs


    1/2 cup cooking oil


    1 teaspoon almond extract


    1/2 cup chopped nuts


    powdered sugar





    Mix all ingredients, except powdered sugar.





    Drop batter (about a teaspoon per cookie) into a bowl of powdered sugar.





    Roll in sugar until it is an approximate shape of a ball.





    Place ion a lightly greased cookie sheet.





    Bake at 350 degrees about 18 minutes, until lightly browned.





    Cool on wire racks. Makes about 4 dozen cookies.





    (Use any flavoring or cake mix you desire.)











    Kreamy Kool-Aid Pie





    1-(6 g) package un sweetened Kool-Aid powdered drink mix


    1-(14 oz.)can sweetened condensed milk


    1-(8 oz)container Cool Whip frozen whipped topping, thawed.


    1-(9 inch) Graham Cracker Pie Crust (or Cookie crust)


    Cool Whip for top (optional)





    1. In a medium bowl mix Kool-Aid and condensed milk, thoroughly.


    2. Fold in Cool Whip.


    4. If desired, spread more Cool Whip on top.


    5. Chill for a minimum of 4 hours.





    I鈥檝e used: Strawberry鈥herry鈥emon-lime (Key-Lime Pie)鈥?Lemonade (Lemon Pie鈥ight add some yellow food coloring for a more lemony look.)
    Casseroles are great. Here are two that people devour when I make them:





    Broccoli Chicken Bake With


    Creamy Cheesy Sauce





    2 Roasted Chickens


    3 cups fresh broccoli crowns, cut up


    1 can cream of chicken soup


    1 cup sour cream


    1 stick unsalted butter


    1 1/2 cups cubed Velveeta cheese


    1 tsp garlic powder


    1 tsp pepper


    1/2 cup crushed club crackers


    13 x 9 glass baking dish





    Lightly grease the baking dish. Take chicken


    off bone, shred, spread evenly in dish.





    Preheat oven to 350 degrees.





    Cut up broccoli, use all the stem, just cut


    any brown areas off ends. Boil water, add


    broccoli and cook for about 4-5 minutes.


    You want crisp, yet tender broccoli. Cooking


    to long with make mushy broccoli. Drain in


    colander, run cold water over broccoli for


    about 1 minute. You want to slow the cooking


    process. Lay broccoli on paper towels to absorb


    excess water. Spread evenly on top of the chicken.





    In medium sauce pan on low heat add


    soup, sour cream, and butter. Stir occasionally.


    When mixture is warm, add the cheese. Stir


    until cheese is melted. Add garlic powder


    and pepper, mix.





    Pour cheese sauce over broccoli and chicken.


    Sprinkle with crushed crackers. Bake for 35 minutes


    or until bubbly.





    An easy breakfast casserole:





    Ham Egg Bake


    1 cup shredded cheddar cheese


    1 cup shredded gouda cheese


    1 1/4 cup sliced mushrooms


    8 - 10 green onions, sliced


    2 tablespoons butter


    2 cups cubed ham


    1/4 cup all-purpose flour


    8 eggs


    1 3/4 cup milk


    Salt %26amp; Pepper


    13 x 9 glass baking dish





    Preheat oven 350 degrees. Lightly grease


    the baking dish, set aside.





    In large saute pan, turn to medium heat,


    add butter. When melted add mushrooms,


    saute 5 minutes, add onions cook 5 minutes,


    stirring often. Remove from pan.





    Add diced ham to pan and cook 4 - 5 minutes


    until water evaporates. Place on paper towels to


    absorb excess liquid.





    In a bowl add flour and milk, whisk to combine.


    Add eggs, whisk until blended and fluffy.





    Combine the cheese; sprinkle into the greased


    pan. Sprinkle ham, mushroom and onions over


    cheese. Season with salt %26amp; Pepper, slowly pour


    egg mixture over ingredients.





    Place in oven and bake for 35 - 45 minutes or


    until a knife inserted near the center comes out


    clean. Let stand 5 minutes before serving.





    Meatloaf is always a winner:





    Victoria's Famous Meatloaf


    1 pound ground chuck


    1 pound lean ground beef


    2 eggs


    1 small sweet onion chopped


    1 large green pepper chopped


    2 garlic cloves minced


    2 tbs butter


    1 tbs olive oil


    1 cup toasted bread crumbs


    1/2 cup grated Romano cheese


    8 oz can tomato sauce


    1/4 cup ketchup


    1 tsp salt


    1 tsp pepper





    Glaze:


    2 tbs brown sugar


    1/2 cup ketchup


    2 tbs Worchester sauce





    Heat large saute pan on medium-high heat.


    Add olive oil and butter. Saute peppers %26amp; onions


    6 minutes, add minced garlic, saute 3 minutes.


    Season lightly with salt %26amp; pepper. Cool in glass


    bowl to room temperature.





    Heat oven to 350 degrees.





    Set eggs out for 10 minutes. In large mixing bowl,


    add ground sirloin, lean ground beef, bread crumbs,


    Romano cheese, tomato sauce, ketchup, eggs,


    sauteed peppers, onions, %26amp; garlic. Add salt %26amp; pepper,


    mix ingredients, if mixture seems a bit loose,


    add more bread crumbs.





    In a glass 13 x 9 dish, turn mixture into pan, mold


    to a 3 inches high by 9 inches long shape. Mix glaze


    ingredients in bowl. Spoon on half, spread evenly.


    Place in oven, bake 45 minutes.





    After 45 minutes, spread on remaining glaze,


    return to oven for 10 minutes. Then turn oven to


    broil, cook 5 minutes....this will set the glaze with a


    light caramelized crust.
