Quick and Spicy Tomato Soup
Recipe courtesy Giada De Laurentiis
3 tablespoons olive oil
2 carrots, peeled and chopped
1 small onion, chopped
1 clove garlic, minced
1 (26-ounce) jar marinara sauce (recommended: San Marzano brand)
2 (14-ounce) cans chicken broth
1 (15-ounce) can cannellini beans, drained and rinsed
1/2 teaspoon red pepper flakes
1/2 cup pastina pasta (or any small pasta)
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
Warm the olive oil in a large soup pot over medium-high heat. Add the carrots, onion, and garlic and saute until soft, about 2 minutes. Add the jar of marinara sauce, chicken broth, cannellini beans, red pepper flakes, pasta, salt and pepper. Simmer for 10 minutes. Ladle into bowls and serve.
Fast Chicken Taco Salad Recipe
1 1/2 lbs. cooked skinless, boneless chicken breast
2 large bunches green onions
1 C. dairy sour cream
1 C. chunky picante salsa
8 C. tortilla chips
Cut chicken into 1/2 - to 3/4 -inch pieces. Thinly slice green onions
Fast Ramen Toss Recipe
1 C. walnuts or pecans, chopped
1 pack Ramen Noodles
1/2 stick butter
Break up noodles in package -- open package and discard flavor packet. Brown noodles and nuts in butter. Drain and cool on absorbent paper towel.
Dressing:
1 C. salad oil
3/4 C. sugar
1/2 C. red wine vinegar
3 T. soy sauce
Blend in a small bowl together until mixed.
Salad Mix:
romaine lettuce
broccoli florets
green onion (chopped)
Mix all ingredients together and serve.

4. In a rush? Smithfield, Hormel, Armour have packages of PRE-COOKED beef tips, roast, pot roast, pork roast, chicken, ham, meatload. Use this for your meat dish with a side dish or two of vegetables, rice, or potatoes. You will find these packages near the meat section, they are not frozen.
5. Tyson's fully cooked whole chickens are delicious. I serve them often with S%26amp;W canned sweet potatoes, Stove-Top dressing, microwave chicken/turkey gravy in jars, a canned vegetable, canned cranberry sauce, and frozen Pillsbury Microwave Biscuits which are better than I can make. A frozen pie defrosted and fully cooked. Perfect for one or two people at Thanksgiving or Christmas.
6. Another thing you can do is cook in a slow cooker or a crock-pot. You put the meat meal into the crock-pot in the morning and it cooks all day long. The meal is ready at dinner time. Crock-pots can be bought at your grocery store, WalMart, Target, etc. BE SURE to read the booklet that comes with the crock-pot.

7. If you are in a hurry, go to your grocery store and pick up a roasted chicken that you can buy in the deli section. They also have side dishes such as veggies, salads, desserts, and etc.
8. Frozen dinners are always a good choice. Our favorites are Stouffer's, Marie Calendar's, Michael Angelo's, Boston Market's. Just add a side dish, salad, or fruit salad. Desserts can be bought at their bakery section.

its great that you want to cook,and not just go out and eat! you can always type in what you want on a search engine, and many recipes will come up. just choose the quick ones. good luck!
one of my faves:
boil half a box of rotini or shell pasta
when it's almost done, like maybe 3 more minutes, drop in broccoli florets (you can use frozen). strain the two together. in a large bowl, add cooked chicken or shrimp, and alfredo sauce or marinara sauce. put the hot pasta and broccoli over it and mix well. the heat from the pasta and broccoli will heat the sauce and rewarm the chicken or shrimp. put some lemon pepper on it, and eat. my son likes this, and did this the first year of college for his roomie. it spread around his dorm like wildfire. good luck and enjoy!
