What are some fast, easy recipes for dinner after work?

My fiance and I just moved into our new home and have a lot on our plate between unpacking, fixing the place up, working and planning for our wedding so their is very little room for large, time consuming meals.





What are some quick, easy and tasty meals we could make? Preferably healthy meals that are very light on red meat.

take a couple of pork chops, salt and pepper them, coat in grated parmesan cheese, then dip in a quick egg wash (just two eggs mixed together), , then in italian style bread crumbs. pan fry for 5 - 7 minutes per side (depending on thickness) and serve with dirty rice and a salad!What are some fast, easy recipes for dinner after work?

warm taco shell


crack 5 eggs into med hot pan with butter-mix around-sit till half way done


stir in 1/2 pack cream cheese-cook 3 minutes (eggs will be very soft)


put on taco shell


put sliced avocado on top of eggs-wrap n eat

';Tasty 2-Step Chicken Bake'; -





4 boneless chicken breast halves


1 (10 3/4 oz.) can cream of mushroom soup





Place chicken in 2-quart shallow baking dish; spread soup evenly over chicken. Cover; bake at 400* - 25 minutes or until chicken is done.








';Oven-Roasted Potatoes'; -





1 envelope Lipton Recipe Secrets Onion Soup Mix


4 medium all-purpose potatoes; cut into large chunks


1/3 cup olive oil





Preheat oven to 450*.


In 13x9'; baking or roasting pan, combine all ingredients. Bake uncovered, stirring occasionally, 40 minutes or until potatoes are tender and golden brown.








';Souper Simple Mac 'n' Cheese'; -





1 can cheddar cheese soup


1/2 soup can milk


1/2 soup can water


1 cup uncooked elbow pasta





Mix soup, milk and water in saucepan; heat to a boil. Stir in pasta; cook over low heat 10 minutes or until done, stirring often.

Mini Quiche








8 oz cheese


1/4 c Sour cream


4 oz Shredded sharp cheddar cheese


1/2 c Bisquick (I used RecipEase)


1/4 c Melted butter


3 Eggs


Preheat oven to 350 degrees. Mix all ingredients with


Electric mixer. Grease mini-muffin tins or use Teflon ones.


Fill 3/4 full. Bake for 15-20 minutes or until brown.


Hints: Add onion, bacon, mushrooms,etc. May be frozen.


Reheat at 300 degrees or microwave for 3 minutes on high.


Note: These are great! Be sure to add cooked bacon and


Some diced onion. This recipe only makes about


1 1/2 Dozen so be sure to at least double! Great

Sausage Triangles





8 oz Pork sausage


1/2 lb Mushrooms, diced


1/4 lb Monterey Jack, shredded


1/2 c Butter, melted


1/3 (16 oz) pkg frozen phyllo





In 10-inch skillet over medium-high heat, cook pork sausage and mushrooms until meat is well browned and mushrooms are tender, stirring occasionally. With slotted spoon, remove sausage mixture to paper towels to drain. In large bowl, mix sausage mixture and shredded cheese.





With knife, cut phyllo lengthwise into 2'; wide strips. Place strips on waxed paper; then cover with slightly damp paper towel to prevent phyllo from drying out.





Place 1 strip of phyllo on work surface; brush top lightly with melted butter. Place about 1 teaspoon sausage mixture at end of strip. Fold one corner of strip diagonally over filling so that short edge meets the long edge of the strip, forming a right angle. Continue folding over at right angle. Continue folding over at right angles until you reach the end of the strip to form a triangular-shaped package. Place package, seam-side down, in 15 1/2'; X 10 1/2'; jelly-roll pan; brush with butter. Repeat with remaining phyllo strips and sausage mixture. If not serving right away, cover with foil and refrigerate.





To serve, preheat oven to 425F. Bake triangles 15 minutes or until golden.

Basic Mini-Meatballs





1 # ground beef


陆 # ground pork


录 cup finely chopped onion


戮 cup soft bread crumbs


2 eggs


1 tsp salt


1/8 tsp nutmeg


Pepper to taste





Mix all well. Roll into small balls. Brown in a minimum of oil until browned all over.





In a 2 quart casserole dish, cover with whatever sauce you are using, bake covered @ 350 for 60 minutes, remove cover and bake 15 minutes more

1 can refrigerated cresent roll dough


2 8-ounce packages cream cheese


1 c mayonnaise


1 package dry ranch dressing mix








Bake crescent roll dough flat, triangles sealed together, on a cookie sheet according to time and temperature directions. Cool. Combine cream cheese, mayonnaise and ranch dressing mix. Spread on crescent roll crust.

Chicken Riva





Chicken breast


Back Bacon


1 Pouch Dolmio Sauce


Mature Cheddar


Corn flour


Rice











Cut a slit in the chicken breast (same as cutting open a finger roll) put two teaspoons of the dolmio sauce into the cut. Slice two 4mm slices of the mature Cheddar and place in the cut as well. Wrap the chicken in two slices of bacon. Place in a flat oven dish. Poor over the remaining dolmio sauce and place in the oven for 50 mins at 180 degrees.





Cook the rice about 15 minutes before the end strain and leave drain for a minute. Take the chicken out of the oven put it on a plate leaving the sauce in the dish. Put the sauce into a sauce pan put on the heat to keep it boiling. Mix two table spoons of corn flour in a mug with some water add to the boiling sauce and it will thicken.





Put some rice into a cup press it in firmly and turn the cup upside down on the plate and remove the cup (Just like making sand castles) take the sauce off the heat and spoon over the chicken.
