This is easy, relatively quick, and versatile: by changing the spice mix, you change the whole direction of the meal. If you want, substitue instant rice (follow box directions) for the vegetables.

Jay's Easy Chicken Dinner

Place a room temperature boneless skinless chicken breast in a ziplock bag with two good size splashes of extra virgin olive oil (canola, or vegetable works fine, too). Add two palmfuls (about 4 tsp total) of your favorite commercial spice blend (be it Emeril's, Paula Dean, or Mrs. Dash), or a blend of your own. Seal the bag, give it a couple shakes to coat, and set it aside.

While that's sitting, steam some vegetables. I use a basket steamer that came with my pots. Put an inch or inch and a half of water in the bottom of the pot, salt liberally. Set the basket steamer in, the water shouldn't come through the holes. Drop in a cup of frozen vegetables, salt and pepper to taste, and add a little bit of that seasoning. Set that on medium high.

Now, back to the chicken. Lightly grease a saucepan/skillet, and put over high heat. Give it a minute or so to heat up, and then drop your chicken in. wait 2-3 minutes, then flip. After another 2-3 minutes, swish it around a little bit (so it doesn't stick), and cover.

After 5 minutes, check the veggies. If they're done enough for you, turn the heat down, if not check them in a minute. After 3-4 more minutes, check the chicken. If it's to temperature (don't undercook chicken, but it doesn't have to be charcoal), then plate up and serve. If not, turn it over and go for another 2-3 minutes.
