Apple Chicken:
1/2 c apple juice
1/2 c water
--bring to a boil in a sauce pain
Add in a breast of chicken. Cover for 10 minutes. Flip chicken and cook for another 5.

It's soup weather... this is easy and tasty; kids really like it, too.
Taco Soup
12 med. onion, diced
1 pound ground beef,
1 pkg, taco seasoning mix
1/2 pkg. dry ranch dressing mix
1 large can stewed or diced tomatoes
1 can Rotel
1 can pinto beans
1 can corn
1) Cook ground beef with onion...drain grease
2) Add the taco and ranch seasonings. Mix well.
3) Add cans of tomatoes, beans, and corn... include juices from cans
4) Stir well and cook on low for around 30 minutes
CREAMY MUSHROOM ALFREDO
3 c. Rigatoni or Penne pasta
2 tablespoons salt
4 c. sliced fresh mushrooms or 2 cans of mushroom pieces, drained (optional)
1 jar Creamy Alfredo Sauce
Salt and pepper to taste
4 tbsp. grated Parmesan cheese
2 tbsp. chopped fresh parsley or 1/4 tsp. dried parsley
Use a large pot with enough water to cover the pasta. Boil enough water to cook the pasta and add the salt to the boiling water. Cook pasta according to direction on the box. Drain. Meanwhile, in a large skillet over medium-high heat, heat the Alfredo Sauce. Add the mushrooms. Cook 5 minutes, stirring occasionally. Reduce the heat to medium. Toss the hot pasta, sauce, the parsley, and 2 tbsp. of the Parmesan cheese. Season with pepper. Place on a platter and sprinkle with the remaining Parmesan cheese. Serve with a green vegetable such as asparagus or broccoli. Have French or Italian crusty bread and a salad on the side.
CHOPSTICK TUNA CASSEROLE
1 (3 oz.) can chow mein noodles
1 can cream of mushroom soup
1 can tuna, drained well
1 c. celery, chopped
1/4 can water
1/4 c. onion, chopped
Combine soup and water. Add half of the noodles and all of the remaining ingredients. Toss and place in a baking dish. Sprinkle remaining noodles on top. Bake at 375 F. for 15 minutes.
For one person ot two?
1) make an omelette and have a green salad with it.
2) Tinned tuna (in brine) mixed with green (French beans) some chopped onion, sun dried tomatoes (or fresh), a boiled egg, some black olives. It makes a delicious salad.
3) A baby chicken, steamed; put in a sauce pan with sliced onion, salt, pepper, about an inch (2 cm) of water, cover and simmer till it is cooked (make sure it does not dry up, but it MUST STEAM -not boil- so at all times very little water) add some saffran. Serve with plain boiled rice and salad.
4) Toss some chicken breast fillets (or any small pieces of boneless chicken) in a non-stick pan, with a spoon of oil, garlic, ginger and chilly, add some lemon juice. Serve with salad or boiled vegetables.
Can't get much easier than this crab ball. and it's deilicious
Crab Ball
I can crabmeat, drained and flaked
8 ounces cram cheese
3 tablespoons chili sauce (or ketchup)
1 tablespoon horseradish
Mix crabmeat and cream cheese. Mix chili sauce and horseradish, spread over crab ball.

Cajun shrimp- shrimp, olive oil and cajun seasoning cooked on a stovetop
I'm not sure if you want something that needs to be cooked or not, but here goes. This is chicken with peppers, onions %26amp; salsa.
boneless, skinless chicken breasts
green pepper (cut in strips)
onion (sliced thin)
zuchini (sliced and cut in quarters)
jar of your favorite salsa
Put the chicken in a baking dish, put the peppers, onions and zuchini on top. Pour salso over all.
Bake at 350 deg (175 C) for about an hour. You can cut into the check to check it. Spoon juices over during cooking a few times.
There you have it. If you like, you can buy the shredded reduced fat Mexican cheese mix to sprinkle over it. About 5 minutes before chicken is done, sprinkle on the cheese. Take out when it's melted and starts to brown.
