Vegetable Pie
I love this one. I usually just use the pre-made pie crusts. Most veggies work well in it. It鈥檚 easy to make a big batch of the filling and freeze until you鈥檙e ready to put into a pie crust!
1 cup Sliced carrots
1 cup Sliced onions
陆 cup Sliced celery
1 cup Cubed potato
陆 cup Cubed turnip
1 cup Cubed sweet potato
Sauce
3 tbsp Margarine/Butter
3 tbsp Whole wheat flour
2 tsp. Instant vegetable stock mix
陆 tsp Salt
录 tsp. Pepper
1 tsp. Parsley flakes
1 陆 cups milk
Whole wheat pastry for 2 pie shells (1 top %26amp; 1 bottom)
Cook the veggies in boiling water until tender. Drain. Cool.
Sauce: Melt butter in saucepan. Mix in flour, veggie stock, salt, pepper %26amp; parsley. Stir in milk until mixture boils %26amp; thickens. Cool. Mix sauce with veggies.
Spoon veggies into pie shell. Cover with the top shell and crimp them together. Cut slits in the top. Bake at 400F for 35 min until browned.
Why not try a quick healthy chicken stir fry.
Heat a little oil in a wok or large pan, add some sliced chicken, when nearly cooked at some thinly sliced carrots, onions, peppers. (any vegetables that you like really, broccoli, mange tout, peas, sweetcorn, muchrooms etc. a handful of beanshoots can be added if liked, then a few shakes of soy sauce, a little water, then a small amount of cornflour mixed with a little water to thicken, season to taste and serve with either rice or noodles.
Fajitas are easy. Fry strips of chicken in a pan add onions and sliced red and yellow peppers, add some fajita seasoning. when cooked place a warmed tortilla on a plate, spread with a little sour cream, salsa and shredded lettuce, place chicken on top then roll up and eat.
Hope these few recipes are of some help to you.
Salads are a good choice and are very easy to make.
You could add a protein to it and viola!
A good vegetarian chili is a wonderful way to go...
All you need is tomato sauce
whole stewed tomatoes
wild or brown long grain rice (in pre-cooked
package)
Diced onion
Chili power
Garlic powder
Sea salt
Cheyenne pepper
There are two ways to cook this.....
1) mix all ingredients into a sauce pan and bring to a boil.
season to taste
2) mix all ingredients and put in a crockpot on low
cook for app. 2-3 hrs.
You can put veggies in as well.
P.S. if you are serving more than two...just increase the amount of ingredients.
KD
1 pack of rameen noodles any flavor really.
1 can of tuna
chopped onion
shredded cheese
and 2 tablespoons mayo
Boil the noodles until fully cooked. ( drain )
Return noodles to the pot
Add the flavor pack and stir
Add the tuna and stir.
Add the onion and stir.
Add the cheese and mayo and stir.
Taste like a homemade tuna casserole it is actually really good. I experimented allot when rameen noodles was all we could afford.
chicken pot pie
lasagna
SOUP!
oooooh or a sweet pizza! (yuk) instead of tomato puree you could have melted chocolate, instead of mushrooms you could have foam shrimps, instead of pepper you could have cola bottles.... you get my drift... (okay i have just thought of this just now i dont know if it exists, plus it would be very sickly after about 2 slices)
