I need quick meals to cook, When you work late hours you need something nutritional , but fast to cook... Any ideasWhere can I find good fast recipes?

Fettuccini Carbonara





5 teaspoons olive oil


4 shallots, diced


1 large onion, cut into thin strips


1 pound bacon, cut into strips


1 clove garlic, chopped


1 (16 ounce) package fettuccini pasta


3 egg yolks


1 cup heavy cream


3/4 cup shredded Parmesan cheese


salt and pepper to taste





1.Heat olive oil in a large heavy saucepan over medium heat. Saute shallots until softened. Stir in onion and bacon, and cook until bacon is evenly browned. Stir in garlic when bacon is about half done. Remove from heat.


2.Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain pasta, then return it to the pot.


3.In a medium bowl, whisk together egg yolks, cream, and shredded Parmesan. Pour the bacon mixture over the pasta, then stir in the cream mixture. Season with salt and pepper. Serves 6.

Italian Beef

Easy Serves:





6 servings Ingredients


1 1/2 pounds flank steak


1/2 cup light Italian salad dressing


1 1/2 cups tomato basil pasta sauce


1 tablespoon chopped garlic


1/4 cup Chianti red wine


1 teaspoon Italian seasoning





Directions


Rinse steak under cold water and pat dry with paper towels. Place in large resealable bag. Add salad dressing, 1/2 cup pasta sauce, and garlic to bag. Gently massage to mix marinade. Marinate in refrigerator for 1 to 8 hours.





In a small saucepan combine remaining pasta sauce, wine, and seasoning. Bring to a boil over medium-high heat. Reduce heat and keep warm.





Remove steak from refrigerator 30 minutes before cooking and bring to room temperature. Preheat grill to medium-high. Just before cooking, clean and oil grate.





Remove steak from bag and discard marinade. Place steak on grill. Cook for 6 to 7 minutes per side. Serve hot with warm sauce.
I make Ceviche (Say-vee-chay) and it's really easy.





Cooked Shrimp cut into pieces


1/4-1/2 bunch Cilantro-chopped


1/4-1/2 Onion or 1 small onion-diced


2-3 Tomatoes-diced


3-4 limes


Salt and pepper





Stir everything together. The reason for more or less on the ingredients, is how much or how big of each ingredient. It's really all about the shrimp. You can eat by itself, tortillas, or with chips. Oh, and if you don't like a ton of lime, I would start out with one, and taste. Add more if there isn't much lime taste.

Mel’s Beans %26amp; Rice


Cook rice first. Then cook beans while rice is cooking.





RICE


1 Tbs. olive oil per cup of rice


Water


Salt





Heat oil in skillet on high. Add rice and fry. Stir occasionally for first few minutes. Do not walk away. When rice starts “puffing”, stir constantly until rice is about to or starts to brown. Add water till it is ¼ of an inch above rice. Add salt and stir. Turn to low* and cover. Let cook for 30 minutes and stir.





*If cooking on a flattop stove, turn to medium and cover. Cook for 15 minutes and turn off stove. Let rice continue cooking on same burner for 15 more minutes.





BEANS


2 Tbs. olive oil


½ small sweet onion, sliced thinly crescent moons


2-3 cloves minced garlic


Cumin


1 14.5* oz. can of diced tomatoes


Cilantro to taste


2 15.5* oz. cans of beans


Salt %26amp; Pepper





*These are regular cans. So it doesn’t have to be exact. You can use 1 of the large cans of beans for 2 of the regular ones. I like to use red and black beans. For every 2 cans of beans, use 1 can of tomatoes. You can also add other veggies such as bell peppers, etc. and combine with the onions step.





Heat oil in a sauce pan on medium. Add garlic, onions, and cumin. Sauté until onions is soft or till sautéed preference. Add tomatoes and cilantro. After mixture is bubbling, add beans, salt, pepper, and heat till bubbling. Keep on low till rice is done.
