EASY CHRISTMAS TOFFEE





2 sticks butter


1 c. sugar


1 pkg. saltines


12 oz. pkg. chocolate chips





Cover cookie sheet with foil. Line with saltines. Mix 2 sticks butter with sugar. Boil for 3 minutes. Pour over saltines. Bake for 15 minutes in 350 degree oven. Immediately spread a 12 ounce package of chocolate chips over cracker mixture. Cool - refrigerate if necessary. Break into small pieces. ENGLISH TRIFLE





INGREDIENTS


1 (9 inch) sponge cake, cut in cubes


340 g seedless raspberry jam


225 g fresh raspberries





290 ml heavy cream


3 egg yolks


40 g white sugar





290 ml heavy cream


55 g sliced almonds





DIRECTIONS


Spread a little jam on each piece of cake and place in the bottom of a large glass bowl. Sprinkle raspberries over cake.


Heat 10 fl. oz. cream in a medium saucepan over medium heat. While the cream is heating, beat the egg yolks with the sugar until pale yellow and smooth. Strain yolk mixture into a clean bowl. Pour hot cream into egg yolks and stir vigorously. Return mixture to pan over low heat and cook, stirring, until thick enough to coat the back of a metal spoon. Remove from heat and allow to cool.


While custard is cooling, whip 10 fl oz. cream until soft peaks form. Place almonds on a baking sheet and toast, in a 300 degree oven or toaster oven, stirring frequently, until golden, 2 to 10 minutes.


Spread cooled custard over cake in bowl. Top with whipped cream and toasted almonds. Chill 2 hours before serving.
BOURBON BALLS


About sixty 1-inch balls


Sift together into a medium bowl:


1 cup confectioners鈥?sugar


2 tablespoons unsweetened cocoa powder


Whisk together in a small bowl until well mixed:


录 cup bourbon or dark rum


2 tablespoons light corn syrup


Stir into the cocoa mixture and set aside. Combine:


2 陆 cups vanilla wafer crumbs


1 cup coarsely chopped pecans (optional)


Stir into the cocoa mixture.


Roll the mixture into balls between your palms (the balls do not have to be even). Roll in:

INGREDIENTS:


16 ounces cream cheese, softened


8 ounces whipped topping


1 (.8-ounce) package Wildtree Lemon Lime Cheesecake Blend


1 graham cracker pie shell


Sliced lemons and limes (optional)





PREPARATION:





Combine the cream cheese, whipped topping and Lemon Lime Cheesecake Blend in a mixing bowl and beat until blended. Spoon into the pie shell. Chill, covered, for 2 hours or longer. Garnish with lemon and lime slices.
